“Halal” signs are everywhere, but not every shop can show where its meat comes from. Knowing what to check helps you buy with confidence.

The basics of halal slaughter

For meat to be halal, the animal must be a permissible species, alive and healthy at the time of slaughter, and slaughtered by a Muslim with a swift cut to the throat while the name of Allah is said. The blood must be drained. Certifiers add checks on transport, storage and separation from non-halal meat.

UK certification: HMC vs HFA

  • Halal Monitoring Committee (HMC): certifies meat from animals that are not stunned before slaughter, with inspectors present at abattoirs and tagging and sealing through the supply chain.
  • Halal Food Authority (HFA): accepts certain forms of reversible stunning – where the animal would recover if not slaughtered – provided the animal is alive when slaughtered.

Both reject mechanical slaughter. The difference is mainly about stunning. Some scholars hold that any stunning risks the animal dying before the cut, while others accept reversible stunning as long as the animal is alive. Choose the standard you are comfortable with. In the US and Canada, look for certifiers such as ISNA Halal, IFANCA or HMA (Halal Monitoring Authority, Canada).

What to look for in the shop

  • A current certificate on display, with the certifier’s name and an expiry date.
  • Check the shop on the certifier’s website – most publish lists of approved outlets.
  • Separate storage and utensils if the shop sells any non-halal products.
  • Clean counters, chilled displays and clear labelling of cuts and origin.
  • Traceability: good butchers can tell you which abattoir and supplier the meat comes from.

Questions to ask

  • Which certifier do you use, and can I see the certificate?
  • Is your meat stunned or unstunned?
  • Is poultry hand-slaughtered?
  • Do you sell any non-halal meat?
